I want to use Smallwall as a compact RADIUS captive portal, DNS and DHCP server but not as a router but I can't see a way in the GUI to override the DHCP gateway setting?
I'd also like to add a secondary RADIUS accounting only server (not RADIUS Auth) if that's possible as well.

You can point Smallwall to a RADIUS server but that functionality is not built-in. I am working on installing and configuring one now and hope to post the write-up soon.

SmallWall is designed to be lean. No extra parts to act as attack surfaces. So radiuis has to be on another box or VM. As for DHCP... www.smallwall.org/docs/handbook/faq-hiddenopts.htmldhcpd/(if)/gateway Allows you to specify a custom gateway to assign to DHCP clients (instead of SmallWall's IP address on the corresponding interface)
